Stuffed Round Zucchinis

I saw these little round zucchinis at the farmers market in Harvard Square last week. They looked like perfect edible dinner bowls. I can’t explain my recent obsession with stuffing things, but they always seem to work out, so all’s well that ends well.

Stuffed Round Zucchinis:

  • 2 round zucchinis
  • 1 medium carrot
  • 1/2 medium onion
  • 1/4 lb ground turkey
  • 3-4oz grated cheese
  • ½ tsp sage
  • 1 tsp thyme
  • 1 ½ tsp cumin
  • ½ tsp cayenne powder
  • salt to taste

Cut off the tops and scrape out the insides with a spoon, as if they were tiny pumpkins. Set aside the zucchini bits in a bowl.

Preheat the oven to 375F.

Saute the onion, carrots, ground turkey and zucchini in a large pan. Add the garlic, sage, thyme, ginger, salt and cayenne. Cook until the turkey is done and the veggies are soft.

Remove from heat, and stir in the grated cheese.

Stuff the zucchinis, replace the tops, and bake 40-45 minutes. To brown the stuffed filling, remove the tops for the last 10 minutes.
