Roasted Garlic & Chive Butter

Flavored butters are great for holidays. They are versatile, customizable, and easy to make. Not bad gifts either!

These recipes make about ½ cup each.

 

Roasted Garlic & Chive Butter 

  • 1/3 cup butter
  • 1 tsp roasted garlic
  • 1 tsp chopped chives

Have you ever roasted garlic? If not, you must start now. Even though I only needed about one clove’s worth, I roasted the entire head and put the rest on a pizza. Yum. It’s a very easy process.

Preheat oven to 375. Cut off top of a head of garlic. Coat an old pie pan bottom in oil, and place cut garlic in pan, cut-side UP. Drizzle exposed garlic tops with olive oil and sprinkle with coarsely ground salt. Add pepper too if you want.

Cover pan with aluminum foil and bake at 375 for 40-45 min.

Here is what it looks like after baking.

Once it is cool enough to touch, squeeze garlic out of papery shell from bottom up like toothpaste tube.

Next, chop up some chives.

In a medium bowl, blend together the butter, roasted garlic and chives with a hand mixer. For a lighter whipped consistency, beat for 8-10 minutes.

Scoop the butter into a cute jar.

You can invent totally new flavors, or make butters specifically to pair them with a certain menu.  Here are some others I made.

 

Vanilla Honey Butter

  • 1/3 cup butter
  • 1/4 cup honey
  • 1/3 tsp vanilla

Orange Fig Butter

  • 1/3 cup butter
  • ½ cup fig-orange jam

The sweeter butters can go on morning muffins, toast, pancakes, waffles, you name it.  Savory butters such as the garlic & chive will be good on rolls with dinner, or even to roast a chicken.
