Red Wine Marinade 1

It’s kind of a challenge cooking for two people.  I like to stay somewhat economical and balance the amount of food I take home from the grocery store with how much two of us will eat in a given week and how much of an ingredient overlap I can arrange.

Most recipes serve 4-6 people, so I am forever dividing cups, tablespoons, teaspoons, and sometimes also converting from metric measurements.  That’s right kids, stay in school and learn math so you can eat when you grow up!

So for all you other two person households out there, here is a yummable red wine marinade for 2 chicken breasts, which serves TWO average sized humans.  It’s a slight modification from



1 c red wine
¼ c olive oil
2 Tbsp tamari (or soy sauce)
2 scallions
1 clove minced garlic
1 Tbsp brown sugar
1 ½ tsp Worcestershire sauce
½ tsp fresh grated ginger

Everything goes into a pan to boil for 5 minutes over medium high heat.  Let it cool down completely before using. It will be thickened and a bit reduced. It yields about 1-¼ to 1-½ cups. The perfect amount for two pieces of chicken!

Marinade at least 30 min. I left it for 4 hours, and it was nicely flavorful. I like to flip the bag over halfway through just to make sure it’s evenly marinated.

We usually bake chicken when we have it, but as it was a balmy 45 degrees outside, we decided to grill tonight!
