This is a very unusual, yet fantastic combination from Austin’s family. If ever you want to impress your guests, your date, or your cat, this will do the trick. Ok, your cat will not be impressed. (Unless you ditch the rinds and just sprinkle catnip over the prosciutto.)
Less is not more, when serving appetizers. So we expanded this recipe to include bacon, asparagus, and dates filled with cream cheese!
Preheat your oven to 375 degrees.
Cook the bacon halfway through in the oven. Remove and let cool until you can easily touch them without burning your fingers.
Slice open the dates as if they were hot dog buns, with one side still attached. Stuff them with cream cheese, and then wrap some in bacon, and the rest in prosciutto. Use toothpicks where needed.
Wash the asparagus and snap off the ends. No need to pre-cook, just wrap them two at a time in bacon and/or prosciutto.
Finally, the lovely pickled watermelon rinds! You know what to do.
Cover a baking sheet with aluminum foil and set a rack over top. Arrange everything on the rack, so any bacon grease will fall through. See? Somewhat healthy!
Bake for 15 minutes at 375 degrees.
A nice balsamic glaze goes well for serving, if you are so inclined. Just simmer balsamic vinegar in a small pan until it thickens and reduces. Voila, glaze!
I can vouch that everything wrapped in prosciutto was SO good! However, I have an aversion to the visible fat on bacon, (or anything else) so I can only assume that they were equally tasty, judging by the reactions of bacon eaters!
These are quick, easy, and can be prepped ahead of time. When guests arrive, just pull them out of your fridge and into the oven.
Hmm. I just noticed my only other appetizer post is also bacon related. I’ll have to work on that.
