Plum Basil Syrup

Syrups are easy to make and can be put to use in a lot of creative ways. It’s also a good use of basil, if you have an especially productive basil plant this summer! If your thumb is less than green, no problem. It’s a good excuse to find a farmers market, or any store with good produce. 

Ingredients:

  • 1/4 c fresh basil
  • 1 2/3 c fresh, chopped plums (about 2 black plums)
  • 1 c sugar
  • ½ c water

Makes 1 cup syrup

Note: Wash the plums and leave on the skins for color.

Add everything into a saucepan and simmer slowly for about 20 minutes or until thickened and the plums break down into a compote.

Strain out the liquid by pressing the fruit through a sieve with the back of a wooden spoon to push out all the syrup.

Pour into a jar and let cool thoroughly before refrigerating. Store in the fridge for 4-5 days.

Save the plum and basil compote after straining, it makes a great filling for baked chicken.

  1. Make cocktails
  2. Pour over ice cream
  3. Marinades
  4. Bake cupcakes
  5. Mix with seltzer water
  6. Drizzle onto pancakes or waffles
  7. Stir into plain greek yogurt
  8. Smoothies
