Plum Basil Chicken 1

Plum Basil Chicken:

4 pieces Turkey bacon
2 chicken breasts
3/4 c panko crumbs
1/2 c flour
1 Tbsp nathan’s mustard
1/4 tsp turmeric
salt & pepper
1 tsp thyme
1/8 tsp cayenne powder
1 egg
Plum basil compote (about 1/2 cup)

Preheat oven to 375 F.

Cook turkey bacon in pan and set aside.  In a large bowl, mix together the flour, panko crumbs and all spices. In a second large bowl, beat the egg and stir in the mustard.

Pound the chicken breasts flat. Lay two pieces of turkey bacon on top of each piece of chicken.

Spread out the plum basil compote evenly on each piece, on top of the bacon.

Tightly roll each piece of chicken and secure with toothpicks so they don’t unroll. Dip into egg mixture, covering well. Then transfer chicken rolls to panko crumbs and coat evenly.

Cover the bottom of a baking sheet with aluminum foil to catch any drips, and then lay a wire rack on top for the chicken.

Bake for 25-30 minutes until done. Remove all the toothpicks and cut into rounds.

This recipe took surprisingly little time from start to finish. I’m filing it away under “weeknight friendly”. In case you are wondering, the mustard is subtle, not overwhelming. It goes well with the plum basil filling, so you end up with a sweet and savory chicken.

Sweet and savory chicken pinwheels with plum and basil filling and a hint of dijon mustard.
Ingredients
