Mung Beans

sprouted mung beans on salad

Honestly, my first thought after seeing this ‘Mung Bean Magic’ article was… What the heck is a MUNG bean?

This is how they are explained in the article:

In India, mung beans are known as ‘healing beans’ due to their anti-inflammatory benefits. They’re also known to have powerful antioxidant properties, are low in calories, and high in fiber. Which is the reason why they help curb cravings for carbs and sweets.

Just six weeks later, I felt like a new person. The bloating was gone, I felt lighter, and I had more energy. And my chocoholic tendencies had almost disappeared (almost)!

What’s not to like? I’m not even gonna to do a taste-test first. I’m just going to go get some, because I like discovering new health foods to sprinkle in my salad.

There may, or may not be a follow-up post to this, depending on the results. And also on whether or not I can convince my boyfriend to eat so-called ‘magic beans’ with a name that so closely rhymes with dung.

Here is the Mung Bean article from Elephant Journal.
