Mint Mango Salsa

Fruit, citrus, spice and herbs. That’s all you ever need for a good salsa, and the specific ingredients can vary as widely as your imagination, or refrigerator contents. This particular salsa needed to happen because I had a mango that was threatening to expire, and an overgrown mint plant.

Mint Mango Salsa

  • 1 mango, peeled and diced
  • 1/4 cup red onion, finely diced
  • 1 Tbsp lime juice
  • 1 Tbsp fresh mint, chopped
  • 1 tsp fresh cilantro, chopped
  • 1 tsp minced garlic
  • 1 tsp seeded jalapeño, finely diced
  • 1 ½ tsp olive oil
  • Pink salt & ground pepper

Chop, mince, dice, squeeze and sprinkle all the ingredients together into a bowl, and stir. Voila. SALSA! 
You may want to let the salsa sit in the fridge for a few hours before serving. That way the flavors blend and play nicely together.

Sprinkle a little extra salt to taste.

Aside from the usual tortilla chip topping, you can also serve this with fish. I’m thinking Sole or Tilapia would be good. However, I didn’t see any fish I liked today, so it’s going on chicken instead.

A fabulous salsa made with sweet mango, a hint of refreshing mint and a kick of jalapeno.
Ingredients
  • 1 mango, peeled and diced
  • ¼ cup red onion, finely diced
  • 1 Tbsp lime juice
  • 1 Tbsp fresh mint, chopped
  • 1 tsp fresh cilantro, chopped
  • 1 tsp minced garlic
  • 1 tsp jalapeno, finely diced
  • 1½ tsp olive oil
  • salt & pepper to taste
Instructions
  1. This salsa recipe is about as easy as they come.
  2. Simply chop, mince, dice, squeeze and sprinkle all the ingredients together into a bowl, and stir together.
  3. Voila, salsa!
Notes
Aside from the usual tortilla chip topping, you can also serve this with fish. A nice Sole or Tilapia would be good. Don't see any fish you like at the grocery store today? Don't worry, it is great on chicken as well.
