Low Calorie Spinach & Turkey Bacon Quiche 1

Easter is coming soon, which usually means a lot of food and a few desserts lurking on the table. So in preparation for all that carrot cake, I made a healthy, reduced calorie quiche for this week.

 

If you are planning to eat an entire cake next weekend, and are looking for a super low-calorie quiche, you can always go completely crust-less. But I love crust and stubbornly refuse to part with it, so I’m keeping it balanced by cutting calories with the filling. (I guess that means only half a carrot cake for me).

 

I stayed away from heavy cream, pork bacon, yolks and high calorie cheese, and instead used plenty of spinach, turkey bacon, egg whites, almond milk and mozzarella cheese.

 

This is one of my favorite sort of recipes; the kind that manages to save calories without tasting like it!

 

For an antioxidant boost, I added oregano, cayenne and turmeric. You won’t taste the turmeric much, if at all, but the oregano flavor is present. I sprinkle it on my eggs for breakfast, so I knew it would be good in a quiche as well. The cayenne is not at all spicy in such a small dose, so if you want heat, I would increase it to at least ½ tsp.

 

Low Calorie Spinach & Turkey Bacon Quiche

  • 1 cup unbleached white flour
  • ½ tsp salt
  • 7 Tbsp cold unsalted butter
  • 2 Tbsp cold water
  • 1 cup egg whites
  • ½ cup unsweetened almond milk
  • 1 small onion, cut into ¼-inch rings
  • 5 strips turkey bacon
  • 5 oz spinach, chopped
  • ½ cup mozzarella cheese
  • ½ tsp oregano
  • ¼ tsp turmeric
  • ¼ tsp cayenne
  • salt & pepper
  • ½ avocado, diced (optional topping)

 

In a large bowl, mix the flour and salt. Cut the butter into small chunks, and mix it into the flour with your fingers or a pastry cutter. Add 2 Tbsp cold water, and mix until a dough forms.

 

Place dough on a sheet of plastic wrap, and squash it into a flattened disc shape. Wrap it up with the plastic wrap and refrigerate for 30-45 minutes. Cold dough equals non-sticky dough, and is much easier to work with.

Preheat oven to 375 degrees.

 

Cook the turkey bacon, following the directions on the package. Cut the strips into bite-sized pieces. Chop the spinach, slice the onion and grate the mozzarella. Dice the avocado, if you plan to have it as a topping before serving.

In a medium bowl, mix the egg whites and the almond milk. Add the oregano, turmeric, cayenne, salt and pepper.

Roll out dough on a lightly floured surface, and then lay over a 9-inch glass baking dish. Trim the edges with a knife or rolling pin, and then if you are feeling creative you can decorate the edges! I just quickly went around the edges with a fork.

Arrange the spinach in the bottom of the dish, followed by the onions and turkey bacon. Sprinkle with mozzarella, and then pour the egg white mixture over top.

Bake 40 minutes. Let the quiche stand for 5-8 minutes before serving. Sprinkle with avocado.
