This appetizer idea popped into my head last weekend. They turned out amazingly well, for something so impromptu. I guess it’s a sign that I need to host a party soon, so I can make more and experiment with adding cheese and jalapeno!
Preheat oven to 375 F.
Fold the bacon into cup shapes inside shallow muffin tins, and secure with toothpicks.
Bake at 375 F for 17 minutes.
Meanwhile, grind up the baguette into bread crumbs. I could have used panko crumbs from the store, but the baguette was fresh. Also I look for any excuse I can to use that fun grater attachment.
Finely chop the tomato and spinach/arugula.
In a medium bowl, mix together the spinach, arugula, baguette crumbs and tomato with 2 -3 Tbsp mayonnaise and ground black pepper.
Remove the bacon from the oven when it’s done, and drain out any grease.
Fill the bacon cups with the mixture.
Bake at 375 F for 5-8 minutes.
I was able to remove the toothpicks before serving. I suspect they hold together on their own through a combination of magical bacon origami and the heated filling.
