Honeydew Grape Popsicles

These are good when you just need to munch on something without a ton of calories.

Honeydew Grape Popsicles with Green Apple Syrup:

  • ½ c sugar
  • ½ c water
  • half a green apple, chopped
  • 2 cups honeydew, chopped
  • 1 cup green grapes

Boil the water, sugar and apple in a pan until the apple begins to break down and the liquid is reduced by half.

Push the apple and syrup through a sieve to separate the syrup from the fruit. You should end up with ¼ cup of apple syrup, If you have less just add a bit of water.

Save the apple compote for breakfast. Stir it into a cup of plain greek yogurt, or have it on toast with some peanut butter.

In a blender, puree the honeydew, grapes and apple syrup together until smooth.

Pour into your popsicle molds and freeze for around 6 hours.

To remove them, run them under warm water for a couple seconds.

I like these popsicle molds because they have a little built in straw. I can never seem to eat frozen things fast enough. This way I don’t have to choose between brain freeze and a fruity, melted river down my arm.

Lightly sweetened, refreshing melon and green grape popsicles.
Ingredients
