I bought some lemon flavored mayonnaise at the store and I have to say, it is the best! I love the hint of lemon because it adds a subtle bright taste. The only downside is that it’s a spendy little jar, and we ran out of it pretty quickly.
Makes about 2 1/2 cups
1 egg yolk
1 tbsp apple cider vinegar
1 tsp garlic salt
¼ tsp cayenne
3 tbsp lemon juice
2 tsp mustard
2 cups extra virgin olive oil
Blend together eggs, vinegar, garlic salt, cayenne, lemon and mustard in a food processor.
Add the olive oil, drizzle by drizzle, very slowly. It should take about 10 minutes on a low setting to add all of the oil, until it turns into mayo.
Store in refrigerator for a couple weeks.
Soon I may have a diy version of every condiment in my fridge! Well maybe not. Does anyone really know what’s in Worcestershire sauce?
