Fudgy Marshmallow Brownies

I’ve also made these without the marshmallows, and they are pretty awesome. If you are looking for more traditional fudgy brownies, then leave them out. I kind of like the added chewiness they give, but it’s completely a mood decision!

Fudgy Marshmallow Brownies

  • 1/2 cup unsalted butter
  • 8 oz semisweet chocolate chips
  • 3 oz marshmallows
  • 1 1/2 cups sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup unbleached white flour
  • 1/2 tsp salt
  • ½ cup peanut butter chips

Preheat oven to 350 degrees. Butter a 7×9 glass baking pan and line it with parchment paper. This makes it extremely easy to remove brownies later.

Place butter and chocolate in a large heatproof bowl Set a large glass bowl over a pan of boiling water, and melt the chocolate chips and butter together. Stir often. It takes 5-7 minutes to completely melt.

Remove the glass bowl from the heat, stir in marshmallows and set it aside to cool for 10 to 15 minutes.

Stir sugar into the cooled chocolate. Mix in the eggs one at a time, then stir in the vanilla. Then add the flour and salt, and mix well.

Pour the brownie mix into the pan, and smooth the top out with a spatula. Sprinkle peanut butter and chocolate chips over top.

Bake 1 hour and 15 minutes, or until a knife or toothpick inserted into the center comes out with only a few crumbs. It doesn’t have to be 100% clean, as these are meant to be fudgy. But if it’s runny or totally covered with chocolate, then it’s definitely not done.

Transfer pan to a wire rack to cool completely.

Lift the brownies out of the pan using the parchment paper, and cut into squares.
