Dragonfruit Tart

I’ve wanted to try dragonfruit all summer. They look weird, but taste good, like a light kiwi. I looked for dragonfruit recipes, but there are not many. It’s such a light tasting fruit, it would be lost in a complicated recipe. The pineapple glaze on this tart goes great with dragonfruit. If you want try it in a smoothie, pineapple juice is the way to go.

Dragonfruit Tart:

¾ cup unsalted butter
½ cup powdered sugar
1 ½ cups unbleached white flour
1 package (10-12 oz) white chocolate chips
¼ cup heavy whipping cream
1 8oz package cream cheese
½ cup pineapple juice
¼ cup sugar
1 Tbsp cornstarch
½ tsp lemon juice
1 pint fresh strawberries, sliced
1 dragonfruit

In a large bowl, cream butter and powdered sugar together. Stir in the flour until dough is evenly mixed. Press into a 12 inch greased pan. The dough should be about ¼ inch thick. Bake at 300° for 25-28 minutes or until lightly browned. Let it cool.

In a pan, melt the white chocolate chips over low-medium heat. Remove from heat, and mix in the cream. Add the cream cheese and stir until smooth.

Spread over the cooled crust. Chill for 30 minutes in the fridge.

In a small saucepan, combine the pineapple juice, sugar, cornstarch and lemon juice. Bring to a boil over medium heat. Stir for about 2 minutes or until thickened. Let it cool.

Arrange the dragonfruit and strawberries on top of the cream cheese layer.

Brush with glaze. Chill for 1 hour before serving.

Refreshing, light dragonfruit and strawberries on a cream cheese and white chocolate covered tart. Brushed with a shimmery pineapple glaze.
